Makes 3 loaves.
- 1 tbsp dry yeast
- 5 cups warm water (95°-100°)
- ½ cup honey
- 8 cups whole wheat flour
- 4 cups unbleached white flour
- 1 tbsp salt
Preheat oven to 350°.
Grease three bread pans (we use a canola spray).
Mix the dry yeast, water and honey for ten minutes.
When it begins to “bubble”, add the flour and salt.
Once it is thoroughly mixed, divide into the three pans.
Spray the top, and cover with plastic wrap. (*see below).
Let the covered dough rise (approximately double in size).
Bake at 350° for approximately: -40 minutes or
-30 minutes in a convection oven.
(*from above: At this point, the dough freezes well. You may wish to wrap extra well for future use. When it is time to bake: simply thaw, rise and bake. You may prefer to thaw overnight in the refrigerator.)
